Spinach Obsession..


...Okay, so I'm a little obsessed with spinach, but not because I love the taste.

It's just that once I bought a package of spinach and it was labeled "super food." I thought, "how can I get more of this superness in me??"

Here's a few ideas to get more "superness" in your meals:

First of all, whenever I make anything, I think- "is this something I can throw a little spinach in and not notice?" Here's a few examples. If you are always thinking of spinach, you will find more and more things to put it in.

1. I buy a bag of spinach and save 1/2 to mix into salads (I can't do an entire spinach salad, but I can mix a few leaves in with my romaine.) Then I freeze the rest. Don't freak out, I'm gonna give you some good ideas to do with this.....

2. Smoothies- I know, I wasn't sure how it would work, but it did! Just make a smoothie how you normally do (ie. lowfat milk, strawberries, honey) and grab a handful of the frozen spinach, chop it, and toss it in the blender with your other ingredients. Of course you'll want to blend it well. My kids had no idea, and they guzzled it down. It didn't change the texture or taste of my smoothie, and I totally scored on superness.

3. Bean Burritos- When I make a whole wheat bean burrito, I chop up some of the frozen spinach and mix it with the fat free refried beans. Again, it doesn't affect taste or texture. It might not look so pretty, but it's what's on the inside that counts anyway, right??

4. Marinara Sauces- Anything tomato based that you will most likely be serving with pasta. Just chop up that spinach and throw it in with all the other herbs.

5. Sandwiches- When you make a sandwich and put lettuce (romaine or other really green leaf), throw in 2-3 leaves as well.

6. Tacos - Prepare taco meat like normal (I use ground turkey), and chop up that frozen spinach and add to the meat sauce. Serve on whole wheat tortilla (I like Best Life tortillas from Mission. It's still whole wheat, but feels lighter.)

Okay, so take a look at why this is a super food, and you will be obsessed as well:

*Full of folate for heart health, healthy babies, and vitamin K which makes a protein
important for bones.
*Packed with powerful antioxidants for disease prevention and healthy eyes.
*Contains vitamin A, magnesium, potassium, protein, fiber, vitamin E, and even omega-3 fatty acids
*chlorophyll (responsible for the vegetable's green colour), a substance that gives the cells of your body a tremendous boost of oxygen. I like oxygen. It just makes me feel so alive.

Now go get you some superness. Wait, is that a word?
